Vegan Ambrosia
This vegan ambrosia is the ideal sweet ending to your healthy dinner. With healthy fat from the coconut and a generous helping of vitamin C, your family will never suspect it's so good for them!
Ingredients - 1 cup of fresh pineapple chunks - 1 cup of chunks of fresh orange - 1 cup of sliced fresh strawberries - 1 cup of organic seedless grapes (can be red or green) - 1/2 cup shredded coconut - 1 tablespoon cornstarch - 6 tablespoons fresh squeezed lemon juice - 3 tablespoons sugar - 3 tablespoons fresh squeezed orange juice - 1/2 cup soft tofu, pureed - 2 teaspoons grated orange rind Combine the fresh fruit and coconut in a large bowl. Toss well and refrigerate. In a medium saucepan, stir together the cornstarch and lemon juice until well blended. Place the saucepan over low heat and add the sugar and orange juice. Cook, stirring constantly, until the mixture thickens, about 5 to 10 minutes. Remove the saucepan from the stove and allow to cool thoroughly. Fold the puréed tofu and orange rind into the juice mixture and chill for at least 1 hour. Pour the dressing over the fruit immediately before serving. Makes 6 to 8 servings.
