Vegan Lettuce Wraps
Vegan Lettuce Wraps are fun to eat. Great party food that even kids will dig in to. And this version is a healthy recipe too.
• 1/2 lb extra firm tofu
• 1/4 cup chopped mushrooms
• 1/4 cup chopped water chestnut
• 1/4 cup chopped bamboo shoots
• 1/4 cup chopped celery
• 1 teaspoon chopped garlic
• 1 teaspoon soy sauce or vegan oyster sauce
• 1 teaspoon chopped ginger
• 1 teaspoon sugar
• 1 teaspoon sesame oil
• 1 teaspoon potato starch or corn starch
• Chili oil or chili flakes to taste (optional)
Wraps: 1 head of lettuce, washed and separated (iceberg is best)
Hoisin Sauce for stickiness
Heat a tablespoon or so of oil in a large frying pan. Drain and press the tofu and then crumble it into the pan. Fry until golden. Remove the tofu and set aside.
Heat a little more oil on high in the same pan and then add the ginger and garlic. Stir until brown, about 30 seconds. Reduce heat to medium and return the tofu to the pan. Then add the chopped vegetables and seasoning, and mix well.
To make each wrap, smear some hoisin sauce on a lettuce leaf, and scoop a little bit of the veggie/tofu mixture onto it. Wrap it up and enjoy!
