Vegan Oatmeal Cookies

These Vegan Oatmeal Cookies are so delicious no one will suspect they're a healthy snack! This proves that vegan cookie recipes can be low fat. No margarine or butter needed - this recipe uses applesauce instead. These little tricks make it easier to lose weight for life.

Ingredients

- 2 cups Quick Oats

- 1 cup Whole Wheat Flour

- 1 cup White Flour

- 1 teaspoon baking soda

- 1 teaspoon salt

- 1 teaspoon vanilla

- 1 cup brown sugar

- 1/2 cup granulated sugar

- 1/2 cup raisins

- 1 cup applesauce

- 4 teaspoons vegan egg substitute powder (like Ener-G)

- 4 tablespoons water

Directions

Preheat the oven to 375.

Mix the dry ingredients and the raisins.

Mix the vegan egg substitute with the water. Add the egg substitute and the apple sauce to the dry ingredients.

Drop onto a non-stick cookie sheet (lightly sprayed with cooking spray,if necessary). Bake for 12-15 minutes.

Makes about 24 cookies
